Ice Cream Cone Cupcakes

When we were growing up my mother would make her famous Cupcake Cones for birthday parties, school functions, and family events. They were always a hit with kids and adults alike because, lets face it, everyone loves cupcakes and everyone loves ice cream - this was just a new take on the two.

I am now an adult and last year I decided to bring some cupcake cones to a neighborhood adult party (because I always bring some kind of baked good). I didn't think any of this as cupcake cones were as normal to me as night and day.

Well I never expected the response - they were a hit! All of the adults just loved them and they couldn't believe that I had baked the cupcakes in the cone. Everyone went back for seconds (and some folks even thirds) and they all wanted the recipe.

There is really nothing to it but I figured I'd share it here:

You need one box of cake mix (and whatever else you need to make the cake mix), one box of 24 flat bottom ice cream cones (also called cake cones), one container of frosting (any flavor) and then any decorations you want on top.

Make the cake mix according to the directions (including preheating your oven according to the directions). Set up your cupcake pan with one cone in each spot (minus the paper you'd normally use to make cupcakes). Just stand up a cone in each spot.

Then fill each cone 2/3 of the way with the cake mix. Carefully put the pans in the oven and bake according to the directions on the cake mix box.

Once they are cooked, take them out and let them cool. You'll end up with something that looks like this:

Put some frosting on each cone:

And then decorate as desired:

I like to make these a day in advance and let my frosting set. This will make it less sticky and you can put them in a box or cake tote to carry with you and the frosting won't get everywhere!

Take them to your event and watch the compliments roll in! Enjoy!
